About Pastories

The woman behind Pastories, Yeo Min, who is passionate in preserving and evolving Chinese pastry traditions, will present her signature pastries to people in Singapore. By handcrafting components like maltose, where sugars are extracted from sprouted wheat in a practice that was once common but now rare, she brings an artisanal touch that sets her pastries apart.

About Baker X

Launched in December 2021 by Far East Organization, Baker X aims to support home-based bakers by providing them with an opportunity to have first-hand experience running a brick-and-mortar storefront and interacting with customers face-to-face with a fully fitted baking studio and a 20-seater café. Patrons can dine in or takeaway the baked goods at the café on Level 4 of Orchard Central (opposite Genki Sushi). The café is operated in tandem with social enterprise, Tea Ideas. There will be a line-up of bakers throughout the year, and each baker will be in residence for between 2 to 6 weeks.

Pastries Menu to Try

Min’s residency at Baker X will be used as her mini ‘museum’, where you can browse a curated ‘library’ of her local cookbook collection and sample her pastries, offering the chance for people to learn about Singapore’s rich food history and savour a piece of it.

Offered during Pastories’ residency is the sweet and savoury Kueh Kosui Crumble Bar ($8). The rich layer of gula melaka mochi is layered with a crunchy oatmeal coconut crumble and topped with coconut shreds for extra textural delight. 

Not to be missed during Pastories’ residency are her traditional bakes. Delight in the Ang Ku Kueh ($2), available in two timeless varieties: mung bean and peanut.

Don't missed the beloved Egg Tart ($3) presents a silky egg custard filling nestled in a buttery pastry shell, sure to satisfy any sweet cravings

 Also available exclusively at Baker X, make sure to try the Gula Melaka Banana Cake ($8), it is inspired by a vintage brochure from Carnation. This rendition features caramelised bananas and gula melaka, topped with a salt-spiked crunchy crumble. Finished with a drizzle of gula melaka syrup and evaporated milk that seeps into the moist banana cake, every bite offers a delightful harmony of flavours. 

 Another menu to highlight is the Bandung Tres Leches ($10), it is Pastories’ take on the classic Mexican sponge cake, soaked in three types of milk and infused with rose syrup, paying homage to local flavours. 

 

And Inspired by her favourite yuan-yang dessert of almond and sesame paste, Min combines these classic flavours with her beloved butter cake recipe to create the Almond-Sesame Marble Cake ($8).

 

Besides from the sweets, Min creates the Mushroom Rendang Focaccia ($10), which features a flavourful Rendang spice mix by Jeya Spices, freshly fried and kneaded into focaccia dough for a bold kick of spice. It is finished with shredded kaffir lime leaves and oyster mushrooms! 

Fun Workshop to Join!

The highlight of Min’s residency is her weekly hands-on workshops focusing on traditional Singaporean recipes. Look forward to special collaborations, including one with Pasarfish on 25 October from 7 - 9 pm.  Explore the intersections of heritage and sustainability, where you will learn to make Otah using less endangered fish. 

Other exciting collaborations include a session with Min’s mentor, Chef Pang, offering the unique opportunity to master the art of making Orh Ku Kuehs. Look out for Pastories’ social media for more details on the workshops.
