Blue Bottle Coffee Announces Opening of First Southeast Asian Outlet in Singapore

Blue Bottle Coffee is proud to announce the opening of its first café in Southeast Asia, located at LUMINE SINGAPORE in Raffles City Singapore.

Equatorial SG’s signature experience begins with an open Binchotan kitchen, where precision charcoal grilling enhances depth and smokiness in every dish. Binchotan, a highly regarded form of white charcoal, burns at an exceptionally high heat while imparting a clean, subtle smokiness, allowing ingredients to shine without overpowering their natural flavours..
Signature dishes such as the Matcha Curry Grilled Masala Chicken, a fresh whole leg of chicken infused with ceremonial matcha and paired with a creamy yogurt raita, exemplify the balance between bold flavours and refined techniques. Another standout is the Sliced Ribeye Bulgogi, featuring thinly sliced ribeye marinated in ssamjang and sesame dressing, complemented by nashi pear and garlic slices for a rich depth with a hint of sweetness.

Opened in March 2025, Station by Kotuwa is a vibrant offshoot of Sri Lankan restaurant Kotuwa, paying tribute to Chef Rishi Naleendra’s heritage.
With Station by Kotuwa, Rishi ventures forward with a fresh, fun, and approachable Sri Lankan dining experience. Designed for versatility, it caters to all manner of visits; spontaneous gatherings, planned dates, after-work drinks, full meals and quick bites.
Using unexpected ingredient combinations and cross-cultural techniques, the results are punchy yet light; familiar yet new; Lankan yet contemporary. This include the Babath Crispy Tripe, Smoked Chilli, Lime ($7++); Beetroot, Shishito Pepper, Malay Pickle, Curd ($14++) and Kaliya Chicken Liver, Egg Roti ($14++).
With no doors, only shutters, Station echoes the incessant, unconstrained flow of people at a bustling train station. The mixed arrangement of banquette and high table seating; the infectious energy that flows from the open kitchen to the rest of the restaurant; the natural comings and goings of friends and strangers – creates a mood of come-as-you-are effervescence.
New - Mare Hachikyo Singapore

Mare Hachikyo Singapore launches at Palais Renaissance Orchard, marking the first overseas outpost of the popular brand from Sapporo, Hokkaido.
At the new Mare Hachikyo Singapore, diners can look forward to kappo-style omakase that is profoundly seasonal, with a constantly refreshed menu prepared with no distractions and frills; but carries subtle Chinese and Western inflections. Pioneered by Hachikyo Group, Tsukko Meshi features premium ikura (salmon roe) served overflowing on rice. It is served as part of the Signature Donabe in the omakase.
Dishes from the 9-course dinner omakase ($228++) are also available in set lunches (from $68++) with a choice of 3 courses, 4 courses and 5 courses, offering both value and flexibility as guests make their preferred selection. Every dish in the omakase is also featured in an à la carte dinner menu with a minimum order of 5 dishes, presenting the freedom to curate one’s own experience.
Complementing the dishes is a thoughtful selection of fine Japanese alcohol, from sake to premium whisky beer and shochu sourced from across Japan.

New Resident - Petit Goûter at Baker X

Baker’s X newest resident is Petit Goûter (@petitgouter.sg), who will be operating out of Baker X from 5 April to 1 May 2025.
Petit Goûter, a home bakery established in 2023, offers a delightful array of treats such as cookies, brownies, and gâteau cakes. Founded by Ecclesia, a pastry chef whose love for baking was nurtured by her childhood in Switzerland and France, the bakery specialises in creating timeless bakery classics with European techniques and modern flavours. After honing her skills at Le Cordon Bleu Paris, Ecclesia returned to Singapore to share her passion for baking, focusing on natural flavours, high-quality ingredients, and artisanal craftmanship.
Highlights offered during their residency include their crowd-favourite Cookies, made with French butter and premium chocolate. Look forward to their Blackout Brownies, Brookie Meet Cute, and Classic Lemon Drizzle Gâteau.

Massimiliano Prete Pop-Up at La Bottega Enoteca

Italy’s most influential pizza chefs, yeast expert and dough maestro, the award-winning Chef Massimiliano Prete of Sestogusto in Torino (Turin) will be making a special three-night-only appearance this April at La Bottega Enoteca.
Diners can look forward to Chef Massimiliano’s signatures such as Pan Brioche + Acciughe Al Verde, featuring fluffy and buttery brioche with a traditional Piedmont starter of Spanish-imported anchovies in salsa verde with aromatic herbs. Another highlight is the Croccante Mais + Gambero Rosso, a crisp pizza base topped with vermillion Gambero Rosso prawn, burrata, sweet and nutty Lardo Iberico and creamy guacamole.

The Breaded Fish Otah Tortilla offers a reimagined take on local otah, balancing spice and crunch with green papaya salad and crushed peanuts.

Racines is unveiling a new menu from 2 April 2025, celebrating the harmony of French and Asian cuisines. Exciting new highlights on the menu include:
- Racines Lobster Bisque – A zero-waste creation that elevates a classic, blending lobster shells into a deeply aromatic broth with French butter, brandy, and a hint of lemongrass, served with half a Boston lobster.
- Seared Hokkaido Scallops à la Meunière – A refined take on a French favourite, featuring plump scallops seared in butter and brightened with a touch of calamansi for a zesty lift.
- Salt-Baked Pineapple-Fed Yellow Chicken Leg – Marinated for six hours and salt-baked to perfection, this dish showcases the natural sweetness and tenderness of pineapple-fed yellow chicken, served with cordyceps, truffle, milk cabbage, pickled vegetables, and brown rice.

Local High Tea
Available every Saturday, the Local High Tea at Opus Bar and Grill pays homage to Singapore’s multicultural cuisine with a refined high tea experience. This elegant semi-buffet invites guests to indulge in an array of free-flowing delights from eight curated stations, including a live-action station serving freshly prepared popiah, kueh pie tee, XO fried carrot cake, and chicken satay.
Local High Tea is available every Saturday from 12 pm to 3 pm, at $58++ per adult and $29++ per child aged 6 to 12, which includes water, coffee, and tea.
Skewers & Sliders Stack
Opus Bar and Grill introduces a new way to savour the afternoon with the Skewers & Sliders Stack, a robust and flavour-forward layer of dishes made for sharing. Crafted through careful innovation and experimentation by MO BAR’s team, The Echoes of Singapore uncovers the rich stories that shaped Singapore, while celebrating the collaborative ‘kampung spirit’ of the local cocktail industry through shared ingredients and knowledge. Together, it offers a distinct sipping experience that embodies the Exceptionally Singapore spirit, echoed by Mandarin Oriental, Singapore.
The Echoes of Singapore comprises 15 cocktails across five chapters, and here are some highlights,
- Miss Samsui (SGD 27) memorialises the Samsui women—Chinese immigrant labourers who played a vital role in building Singapore, recognisable by their iconic red headdresses. The drink features Lapsang tea blend and maraschino cherries, infused for months in red wine, embodying their resilience, while shochu lends a gentle balance, reflecting the quiet fortitude of these remarkable women.
