Sol & Ora - meaning ‘Sun & Shore’ in Latin – is a restaurant inspired by the Mediterranean way of life - any time, any day, sunrise to sunset, this sanctuary by the sea allows you to unwind and embrace the style of living that has come to be emblematic of the Mediterranean ‘good life’.
The restaurant is located next to 1-Altitude Coast Rooftop Bar & Day Club, within reach of other hotels and lifestyle destinations and three beaches on Sentosa.
The Food
The Mediterranean region is famously a melting pot of culinary history and tradition unmatched in diversity and richness. Its seas and soils yield a bountiful harvest; most especially of fish and seafood and of all manner of fruit, herb, and vegetable. Sol & Ora pays homage to this with a fresh, produce-driven menu curated from the sea’s northern littoral, namely the ‘Latin-Mediterranean’ countries of Italy, France, Spain and Greece.
Seafood Fregola
Sardinian Porcetto
The best of each cuisine is showcased through timeless recipes reinvented with a twist and finesse; crafted with variety for different times of day. From Italy comes house-made and hand-crafted pastas and risotto with highlights such as Seafood Fregola and Sardinian Porcetto.
Brioche ‘Parker’ Loaf
La Bomba
The French offerings are led by light seafood dishes inspired by the French Riviera, as well as the Brioche ‘Parker’ Loaf and Artichoke Brie gratin. Spanish flavours come alive with ‘La Bomba’ and Churros, along with tapas and other creations grilled to perfection on the Josper grill.
In the Greek selection, vegetables and herbs take centre stage, most notably with the Vegetable Moussaka and recipes steeped in history such as the classic Imam Bayildi.
Drinks
The restaurant’s list of remarkable, expressive and nuanced wines is thoughtfully sourced from Latin-Mediterranean countries, whose venerable histories in wine-making result in what is considered the world’s largest grape harvest. While old-world wines dominate, the selection also includes labels produced with minimal intervention and recognised as organic, biodynamic or experimental following the natural wine movement.
Sol & Ora’s cocktails evoke the sunny perfumed shores of the Mediterranean in light, thirst-quenching blends of quality spirits, fresh herbs, fruits, spices and house-infused syrups. Taking their cue from key ingredients grown along the Latin-Mediterranean coasts, they encapsulate the distinctive drinking culture of each country.
A must-try is Brise Côtière showcasing the typically French ingredients of Grey Goose vodka, Pampelle liqueur, and Lillet Rose. Amalfi Afterglow incorporates the famously Italian components of Pigskin gin, limoncello and Prosecco. Appreciate the Greek flavours of Old Sport gin, Greek 5-herb tea syrup, and rose syrup in Summer Solstice; while the brandy, blood orange, and house-infused carbonated white wine sangria mix in A Night in Ibiza are inspirations from Spain.
The Space
Perched on the rooftop of The Outpost Hotel, the bright and light-filled 3,000 square feet interior opens to an adjoining azure infinity pool overlooking Sentosa island’s pristine beaches and the calming sea.
The seamless, free-flowing layout is imbued with the communal culture of the Mediterranean. Other hints of the coastal region are evident in the crisp aesthetics of natural woods and stone as well as contemporary tones of greys, black, white, and browns. Slide into blissful relaxation at the lounge where welcoming rattan armchairs and sofas offer an idyllic spot for drinks, tapas or a light meal.
The coved ceiling and a succession of warm lighting lend softness and depth to the main dining area. Connecting the tranquil surroundings to the indoors are large, floor-to-ceiling windows interposed with glass and wrought iron lantern-like wall lights. Seating is a varied mix of wooden top tables and plush leather-backed armchairs as well as cane woven-backed chairs and sofas. At the end of the linear space is a wine chiller and an open kitchen, heightening the convivial dining.
